Questions
Everything people ask us.
If it is not here, write to us. Someone at the mill answers.
Ordering and shipping
Getting it to you.
How long does delivery take?
Two to three days. Orders leave the mill within one business day. Every pack is nitrogen sealed after baking, so it travels at room temperature and does not need a cold box to get to you in good shape.
Do you ship to the whole country?
Anywhere in the United States, and to Canada. A sealed pack keeps four weeks at room temperature, so distance is not the constraint it is for most fresh food.
How much is shipping?
Shipping is free on orders over $50. Below that a flat rate applies, shown at checkout before you pay.
Does it need to arrive cold?
No. The nitrogen seal is what keeps it fresh, not the temperature, so a pack that arrives at room temperature is exactly as it should be. Put it in the fridge when it lands and it keeps longer. If a pack turns up damaged or the seal is broken, email us with your order number and a photo and we will replace it.
Can I change or cancel my order?
Email us as soon as you can. We mill and press to order, so if the batch has not been made yet we can still change or cancel it.
Is it gluten free?
Yes, apart from one. Millet, sorghum, finger millet and amaranth are naturally gluten-free grains. They are not processed to remove gluten, they never had any. The single exception is the Wheat Chapati & Poori, which is made with wheat.
What is in the tortillas?
Whole millet flour, milled by us, plus what it takes to bind a dough with no gluten in it: flaxseed, chickpea flour, psyllium husk, a little tapioca starch and sea salt. No preservatives, no artificial colour, no dyes. The full declaration is printed on every pack.
Are there preservatives?
None. Instead of preservatives we flush the pack with nitrogen before sealing it, which takes out the oxygen that would otherwise stale the bread. That is what buys the four weeks, and it is why there is nothing on the ingredient list you would not recognise.
Do they contain nuts?
None of our recipes use tree nuts or peanuts. If you have a severe allergy, email us before you order and we will confirm the current status of the facility for you.
What is the difference between the two lines?
Aztec Superfood Flatbreads are millet tortillas, built to fold. Indian Heritage Rotis are thicker flatbreads for scooping. Same flour, different press.
Where does the grain come from?
Millet and sorghum from growing regions in South India, and the Aztec line from the Andean highlands. We buy by region and by harvest rather than as an anonymous commodity lot, which is why we can tell you where a given batch came from.
Storage and shelf life
Keeping it right.
How do I store them?
Sealed, they are fine in the cupboard. Put them in the fridge when they arrive and they keep longer, which is what we would do. Once a bag is open it goes in the fridge or the freezer, and that is what the pack tells you too.
How long do they keep?
Four weeks from the day they are made, sealed, and the date is printed on every pack. Once you open a bag, keep it refrigerated or frozen and eat it within a few days.
How do I heat them?
Twenty seconds a side in a dry pan over medium-high heat, until they puff. No oil needed.
Why do they crack when I fold them?
Usually not warm enough. Millet needs heat to go pliable, and a cold tortilla will split at the fold every time.
Can I subscribe?
Yes. Choose the subscribe option on any product page to have it arrive on a repeating schedule, and you can change the interval whenever you like.
How do I pause or cancel?
From your account, any time, without emailing anyone. Pause it for a month or cancel it outright. There is no minimum number of orders.
Do you sell wholesale?
Yes. Use the retailer form on the Find Us page and we will come back within two business days.
Can I find you in a store near me?
Search the stockist map on the Find Us page. If nobody near you carries it yet, tell us which store you shop at.
